When using all the pieces, how many inches is the max for a double knit loom configuration?

It is about 2 inches less than the total length of the loom, or a loss of 4 inches when removed. So, just measure the loom and subtract 4 inches for a total. Don't bother with gauge it will not work, but this measurement does.

Can I use these to knit 4 or 6 inch squares?

Yes definitely. You can knit any width up to 5ft. Set up in a 'small round loom' configuration for easy squares.

Is this knitting board good for double knitting? If not, which one is?

This loom is good for double knitting. You will use the U shape ends and the long rails together for the double knit. The 18", 28", 38" looms are designed for double knit also.
