These certainly keep their shape better than the plastic trays BUT they do get very hot depending upon the temp used with dehydrating so please be careful when removing immediately after turning off. They still will sag in the middle when using fruit roll trays with heavy liquid contents. They can be flipped over to use upside down if you are careful since it will not have a lip on the edge to prevent your tray or screen from sliding over the edge. Long lasting material will outlive the dryer itself I suspect.

The original trays, work very well, but the stainless steel option makes for superior, cleanliness and sterile processing of raw meat products in the dehydrator. Easy to brush off any food particles remaining before washing and sterilizing

You will still have to use your plastic inserts, As the food falls through the holes ALOT. It is great for large Slices Of different foods, So forget the hydrating smaller items such as shredded carrots, blueberries Et cetera. Makes a good sized mess And I do not get to Get away from plastics. I do like the fact that it is sturdy And supports the weight of food.

Your jerky (and other foods) will release easily from these metal trays. Just a light spray of cooking oil on a paper towel and wipe the trays before laying out your jerky. Even the stickiest extruded ground jerky won't adhere, and will fully release on their own after a couple hours of dehydration.These are so much easier to wash than the plastic trays, too.

As soon as my Excalibur Dehydrators arrived I ordered these SS trays and silicone sheets to make leathers. I am SO glad I did. The original Excalibur plastic trays nearly collapsed with the initial weight of the tomato leathers I started. I quickly switched out the flimsy trays for these stainless ones and they perfectly supported the heavy leathers. I really can't imagine ever needing or using the original plastic trays. I will just use these stainless ones for everything.

These were the perfect size for my dehydrator, I got them for the sturdiness as I was always afraid of breaking the plastic ones (I haven't broken any yet) I wanted backup should that ever happen. I also am toying with the idea of building a solar dehydrator and thought these would be perfect for one.

These are fantastic, they fit perfectly and fit in the dishwasher. I’ll be getting more for my other dehydrator
