Really good!
This is a good alternative to high carb pastas. I used Thin Slim pastas for a few years. Don’t expect this product to be exactly like the pasta you are accustomed to eating. The texture is different and cooks more quickly. The rice, elbows and ziti cook better than the fettuccini. The fettuccini breaks up and gets mushy.

Hear me out...
I can't speak to what these noodles taste like by themselves. I'm eating keto and found a mac & cheese recipe that called for these specific noodles, so that's how I used them. So in a mac & cheese recipe, they were outstanding!! The mac & cheese seriously had the consistency and taste of the "real thing," but without all the carbs. :) So if that's what you're looking for, then these noodles are worth it. P.S. I'm the only one in my home who eats keto, so I made a 9"x13" pan of keto mac & cheese and froze leftovers (using a Foodsaver) and they were DELICIOUS reheated! Take them out of the foodsaver plastic and put in the microwave for a minute or so on 50% and you're set!

Terrible Product
This product is terrible! I cooked it for the time on the package and the pasta literally fell apart in pieces. Looked and tasted awful. They shouldn't be able to sell this, let alone at this cost.

Great for mac n cheese
First of all, this isn't truly keto if you consider how much the average person would eat in a serving. I would still consider it low carb though and low calorie as well. I made mac n cheese with this pasta and it came out great! The texture is fine within my mac, the difference from the mac n cheese I make with regular pasta is barely noticeable.This does not hold up on its own though. After you boil it, it doesn't hold it's shape very well and kind of turns into a large bowl of pasta crumbles rather than macaroni.

So, I had high hopes for this pasta
So, I had high hopes for this pasta. I've been low carb/keto for a year and a half, and really miss pasta. I'm also a diet-controlled diabetic.I saw these advertised on one of the keto recipe blogs I follow and was quite excited. Ordered the package of two bags of elbows. My non-keto, non-diabetic hubby was willing to try it. I made my mac and cheese recipe two days ago. Here's what happened.The pasta cooked up well, and some came apart, but not a lot. I did cook it 9 minutes because I like softer macaroni than al dente The texture was pretty good. Hard to tell flavor, as it was in a decent amount of cheese, but was certainly edible. Hubby liked it. I liked it.Here's where it went a little sideways. Hubby didn't want any sides with it, just mac and cheese. So I had tested my glucose that morning, it was 105. About 2 hours after dinner, it was 176. Needless to say, that was well over goals. The next morning, it was 98, fortunately.So two days later, we had the other 2 servings. This time, I made low-carb meat and veg to go with it and hopefully slow the carbs down. This time, I checked glucose immediately before eating - it was 95. 90 minutes after eating, it was 160. Yes, lower than the first round, but still well over goals. At about 6 hours later, I remembered to check again, it was 104.I concede there are a lot of possible variables at play here, as is probably the case with most diabetics. With round 1, I didn't eat any substantial protein, but did get some protein and fat in the cheese. In round 2, I ate a true portion of protein and fat, and the meter showed a relatively smaller spike, but it's still too high for me.I wanted to love this, and it was tasty – but I cannot keep jacking my glucose up like this. I won’t be getting more, sorry to say. Unless I’m being naughty, my glucose typically stays under 140 after meals (upper limit of normal after meals).

Game Changer
This pasta is a game changer for me as a Type 1 Diabetic... getting it cooked so it is similar to "regular" elbox macaroni takes a little tending and patience - but the results are so worth it. Just like regular pasta - this pasta takes on all of the flavor you add to it. I have made American Chop Suey and Macaroni and Cheese with these so far and they were both very, very close to the original. My husband - who can eat anything - loves it too. A little pricey - but I could spend less for macaroni and more for insulin... I choose this pasta since it is definitely better for my body.

Best low carb pasta
I’ve had a couple of different low carb pastas but this one is BY FAR the best. It has the best texture. No weird after taste. The ONLY drawback is how expensive it is.

Not a fan
Despite missing pasta I will not be buying this product again. The texture is very strange. This doesn’t seem like pasta at all. Additionally the pasta pieces are broken in the bag. I am truly not a fan.
