I wouldn't, look into adding a thermowell to your mash tun first.

does this replacement include a clip attachment to to the circuit board? my old sensor clips into the control box with a small white clip not featured

No. It doesn't come with a white clip

Will this fix my issue with the temperature reading being extremely high?

yes, replacing the probe will correct the problem of the original on reading too high. This is exactly what it did for me.

What resistance does this produce? If possible what resistance at 70 deg f.
