Inspiring and great fun!
An accessible and entertaining book on fermentation. I can recommend the hot sauce recipes which are working really well for me. The breadth of ground covered enables the curious reader to apply various fermentation practises. The illustrations are very good, too!

What a beautiful book - ideal gift for foodies!
Well this is a totally marvellous book, easy to dip into, fascinating anecdotes and so beautifully illustrated! I've already bought two copies as gifts for friends who love to potter around the kitchen - and they are delighted! Oh and the sauerkraut recipe is a must!

A joy to read! Good for the gut & the soul
A fizzle stop tour of all there is to know about the world of fermentation! What a delight to read. Written with such joy, humour & passion. I love how easy & rewarding it’s been to bring the processes and recipes I’ve learnt into my own kitchen. The chocolate soy tart is one of the best things I’ve ever tried. A multi faceted book - from history to process to recipes, not to mention the beautiful illustrations! A firm favourite on my shelf.

Fascinating stories, great recipes and gorgeous illustrations
When this book arrived I sat down for 5 minutes to flick through it. 2 hours later I was immersed in Jesuit priests sampling hot sauce, kimchi in space and soy sauce grading. I'm also seriously considering where I'm going to store all the jars I've just ordered!Beautifully written and really useful practical guide to fermentation. Tried the recipe for Soy chocolate tart this week and has to embargo daughter from finishing off the whole thing in one sitting.

Great book, terrible index
This is a great book, lots of history and information but the index is terrible if you are searching for a specific ingredient - for instance Beetroot doesn’t get a mention but there are several references to it in the text plus recipes.

Beautiful Book
Such inviting art work- lots of useful hints if you are not finding you are getting the results you might need for your kimchi. There is so much insight that the author has shared and made it a joy to just read even if you don’t plan on making any kimchi

Quality book, quality content
I have just finished reading this book. I thoroughly enjoyed it. I’ve tried the sauerkraut and the hot sauce. I’m looking forward to trying the others. I really appreciate the level of design and artwork. I enjoyed the writing, enough detail and information to make it a useful resource for future reference.

Gorgeous illustrations and great info
This book blew me away and I knew I had to have it the minute I saw the cover. I adore this illustrator and the inside illustrations did not disappoint. But I don’t want to give all of the glory to the illustrator, the writing and information stands on its own as an incredible resource that I’ll be referencing frequently. One of those special books that comes along rarely, the kind that makes you smile every time you see it.

Too much history and not enough of a practical guide
As much as I enjoyed the book, from the preview and reviews I was expecting a bit more in regard to being a practical guide. For me, I found the author concentrated way too much and took up too much space on the history of each of the featured fermented products.Whilst there a number of accompanying recipes and variations for reach fermented product there was only relatively small sections on the practical guide, ins and outs.I would have liked this to have been a bigger feature of the book. Ultimately I was quite disappointed.
