Q: Can this product still be used if your computer does not have a usb c port? can i use a usb c to usb type b cable instead?

The answer to your question is yes! The USB C connection is to the Rode interface, the other end of that connection goes to your computer and that can be the more common USB B connector.

Q: I use apple headphones. how do i connect these to listen to my voice - is there an adapter i should buy - or what headphones should i get? thanks!

Assuming the connector is 3.5mm, you would need a 3.5mm to 1/4” (6.3mm) adapter. The Rode interface will be able to power most easy to drive consumer and professional headphones for monitoring reasonably well.

Q: is amazon an authorized seller? will I have my 10 year warranty working?

According to the Rode website, no Amazon reseller is authorized. That means it has to be sold and shipped by Amazon, and right now it it's only shipped from Amazon but being sold by a third party reseller.

Q: my headphones are bluetooth via a usb plug in, so can i still plug the headset into my pc and with another port the interface?

If you have separate USB ports for the AI-1 interface and your Bluetooth headphone adapter (2 USB ports), then you should be able to set your computer to output audio to the Bluetooth adapter and use the AI-1 as the microphone input at the same time.
