Uncapping knife.

The uncapping knife is a beekeeping device used by beekeepers to remove wax caps from honeycombs already filled with honey. The uncapping fork serves the same purpose. For large beekeeping, there are uncapping machines where rotating knives separate the wafer-thin layer of wax from the honeycombs. In the beekeeper's language, this process is called "uncapping".

Only from the uncapped honeycombs can the honey be separated by a means of the centrifugal force of a honey extractor. Uncapping is made easier when the forks or knives are dipped in warm water. As with the whole harvest process of bee honey, it is favourable if honeycombs and devices are close to the beehive temperature of about 35 degrees. Otherwise, the honey becomes liquid and is difficult to work with.
