Does it display t1 - t2 in f also, or only c

It displays in both Celsius and Fahrenheit. It's a pretty good thermometer, I've had it a while and use it for chemistry applications so it gets exposed to extreme pH ranges and temperature. The thermistor wire has only just now worn out, which happens with all thermistors; nothing wrong with the meter though, great quality for such a low price.

I'm annealing brass, how fast does this read temperature? Response time?

It is virtually instant. The mass of the tip of the thermocouple is so small that it responds to changes in heat very quickly.

When recording maximum temperature what is the sample rate? How many times does it sample per second?

I'm not sure about maximum temperature, but when I used it to check the AC air outlet from the ceiling diffuser after cleaning the coil, the display screen went from 84F down to 62F in a jiffy. I'm sure you will like it.
